Buckeye Blends Slow Cooker Minestrone Soup

Ingredients
- 1/3 cup of Rosemary Extra Virgin Olive Oil
- 1 large zucchini sliced
- 1 carrot sliced
- 1 cup of Cannellini beans (canned)
- 1/2 cup of canned corn
- 1 red onion finely chopped
- 2 cloves garlic sliced
- 4 Tbsp tomato paste
- 4 cups of vegetable broth
- 3.5 oz penne pasta
- 1 sprig of fresh parsley finely chopped
Instructions
- Add Rosemary Extra Virgin Olive Oil in a 6 quarts Slow Cooker.
- Add all remaining ingredients and give a good stir.
- Cook on LOW heat for 8 hours.
- Taste and adjust salt and pepper to taste.
- Serve warm.
