Buckeye Blends Slow Cooker Minestrone Soup

Ingredients

  • 1/3 cup of Rosemary Extra Virgin Olive Oil
  • 1 large zucchini sliced
  • 1 carrot sliced
  • 1 cup of Cannellini beans (canned)
  • 1/2 cup of canned corn
  • 1 red onion finely chopped
  • 2 cloves garlic sliced
  • 4 Tbsp tomato paste
  • 4 cups of vegetable broth
  • 3.5 oz penne pasta
  • 1 sprig of fresh parsley finely chopped

Instructions

  1. Add Rosemary Extra Virgin Olive Oil in a 6 quarts Slow Cooker.
  2. Add all remaining ingredients and give a good stir.
  3. Cook on LOW heat for 8 hours.
  4. Taste and adjust salt and pepper to taste.
  5. Serve warm.
