Ingredients

  • 2 lb. pork belly boneless (or pork shoulder)
  • Coarse salt and freshly grated black pepper
  • 6 bay leaves crushed
  • 1 cup of chicken broth or water
  • Hickory Balsamic Vinegar for serving

Instructions

  1. Rub pork with salt and pepper on all sides.
  2. Turn on the Instant Pot and press SAUTE button.
  3. Sear the pork evenly for about 4 to 5 minutes.
  4. Press Cancel and remove the pork from the pot.
  5. Pour the water and add the bay leaves.
  6. Place the trivet and place the roast.
  7. Lock lid into place and set on the Meat/Stew high pressure for 30 minutes.
  8. When ready, carefully flip the Natural Release valve to let the pressure out.
  9. Cut and serve with a light smoky taste combined with hickory's fresh, robust flavor.
