Ingredients

  • 8 zucchinis
  • 1/3 cup of Habanero California Extra Virgin Olive Oil
  • 1 onion finely diced
  • 2 cloves garlic, minced
  • 3/4 lb. ground beef
  • 1/2 cup of long-grain rice, rinsed well
  • 1 large tomato, grated
  • 1 cup of water
  • 1 cup water
  • 1 tsp cumin
  • 1/2 tsp hot red pepper
  • salt to taste

Instructions

  1. Preheat the oven to 400 F.
  2. With a knife, remove the very top of the zucchini and make a hollow.
  3. Heat Habanero California Extra Virgin Olive Oil in a large frying skillet over medium-high heat.
  4. Sauté the onion and garlic with a pinch of salt until soft.
  5. Add the ground beef and the rice; stir for two minutes.
  6. Add grated tomato, water, cumin, hot pepper, and salt; cook until getting a thick sauce.
  7. Fill each zucchini with the meat-rice mixture, put the tops of the peppers on, and place them in the oven.
  8. Bake for about 25 to 30 minutes.
