Ingredients

  • 3/4 cup of Basil California Extra Virgin Olive Oil divided
  • 1 onion finely diced
  • 2 cloves garlic minced
  • 2 carrots, sliced
  • 3 medium potatoes cut into cubes
  • 1 ½ cups of grated tomatoes
  • 2 cups of warm water
  • 16 oz of fresh or frozen peas
  • 2 Tbsp of fresh basil, chopped
  • 1 Tbsp fresh dill
  • Salt and freshly ground pepper to taste

Instructions

  1. Heat the half olive oil in a large pot over medium heat.
  2. Sauté the onion and garlic with a pinch of salt until soft.
  3. Add carrots, potatoes, and tomato; stir and sauté 2 to 3 minutes.
  4. Add water, bring to a boil, and cook uncovered for about 15 minutes.
  5. Add the peas, fresh dill, basil, and the remaining olive oil, and season with salt and pepper to taste
  6. Reduce heat to low, and simmer for 10 to 12 minutes.
  7. Taste and adjust seasonings.
  8. Serve.
