Ingredients

  • 4 Tbsp Meyer Lemon Olive Oil
  • 1 onion diced
  • 2 tomatoes grated
  • 1 carrot grated
  • 1 red horn pepper cut into cubes
  • 1 lb. halibut or codfish fillets skinned, cut into cubes
  • 3 cups of fish broth
  • 1 Tbsp fresh chives finely chopped
  • Salt and pepper to taste

Instructions

  1. Turn on the Instant Pot and press SAUTE button, and add the oil.
  2. Sauté the onion with a pinch of salt for until soft.
  3. Add grated tomato, pepper, and carrot and stir well.
  4. Add the fish, broth, and chives; stir well.
  5. Lock lid into place and set on the MANUAL or SOUP setting for 5 minutes.
  6. When ready, press "Cancel" and flip the Quick Release valve.
  7. Taste and adjust the salt and pepper.
