    Grilled Wild Rabbit with Rosemary

Ingredients

  • 3 cloves garlic minced
  • 2 Tbsp rosemary dried
  • 2 sprigs of thyme
  • Fresh juice from 1 lemon
  • 1/3 cup of Rosemary Extra Virgin Olive Oil
  • salt and freshly ground pepper to taste
  • 3 pounds chicken drumsticks or thighs

Instructions

  1. Season the chicken  with salt and pepper.
  2. Mix all remaining ingredients in a large bowl.
  3. Brush the chicken with the mixture.
  4. Start the grill on medium-high heat for 10 to 15 minutes (lid closed).
  5. Lay the chicken pieces onto the grill rack.
  6. Grill for about 12 - 15 minutes per side, or until the internal temperature reach at least 160°F.
  7. Serve warm.
