Ingredients

  • 1 1/2 lb. grilled pork tenderloin
  • Salt and ground pepper to taste
  • 1 large onion cut into slices
  • 2 chili peppers finely sliced
  • 2 Tbsp fresh parsley
  • 2 Tbsp fresh cilantro
  • 4 Tbsp apple cider vinegar
  • 4 Tbsp Arbequina Extra Virgin Olive Oil

Instructions

  1. Preheat your grill.
  2. Season the pork with salt and pepper.
  3. Grill pork for about 20 minutes.
  4. Pork needs to be cooked to an internal temperature of 145 degrees Fahrenheit
  5. Remove pork from the grill and allow it to rest for 10 minutes; shred or chop meat into strips.
  6. Add pork to a large bowl and add all remaining ingredients.
  7. Serve and enjoy your meal.
