Ingredients

  • 1 egg, beaten
  • 2 ½ cups of long-grain white rice
  • 1/3 cup of Rosemary Extra Virgin Olive Oil
  • 2 green onions sliced
  • 1 red pepper finely chopped
  • 2 cans of chicken soup
  • 4 cups of water
  • 2 cups sliced mushrooms
  • 2 to 3 Tbsp soy sauce
  • Salt and pepper to taste

Instructions

  1. Stir the egg and rice in a bowl until well coated.
  2. Heat the Rosemary Extra Virgin Olive Oil intoa deep frying pan over medium heat.
  3. Sauté the onion, red pepper,and rice over low heat, constantly stirring, for about 5 minutes.
  4. Preheat the oven to 350 F.
  5. Add soup, water, mushrooms, and soy sauce; stir for three minutes.
  6. Cover and bake for approximately 45 to 50 minutes.
