Ingredients

  • 1/2 cup of Basil California Extra Virgin Olive Oil
  • 2 onions finely chopped
  • 3 cloves garlic finely sliced
  • 2 lb. beef, boneless cut into pieces
  • Salt and ground black pepper taste
  • 1 cup of beef broth
  • 1/2 cup of tomato juice
  • 2 Tbsp fresh basil finely chopped
  • 1 Tbsp dill
  • 3 cups of wild greens (any)
  • 3 eggs from free-range chickens
  • 3 Tbsp fresh lemon juice

Instructions

  1. Heat the Basil California Extra Virgin Olive Oil over medium heat.
  2. Sauté the onion and garlic with a pinch of salt and pepper until soft.
  3. Add the beef pieces and sauté for about 5 minutes.
  4. Add broth, tomato juice, basil, and dill; cover and cook for about 35 to 45 minutes.
  5. Add the wild greens, add a little liquid if needed, and cook for about 10 minutes.
  6. Beat the eggs with salt and pepper.
  7. Add the lemon juice and fast stir for about one minute.
  8. Taste and adjust seasonings.
